Rhubarb Coffee Cake July 1, 2008

In the past two CSA boxes I’ve had rhubarb. I rarely bake, but with all this rhubarb I was craving something sweet and rhubarby. I found this recipe on Allrecipes.com and made a few adjustments. It was great and Chris and I were eating it for a week.

1 1/2 c. brown sugar (I used the splenda brown sugar mix)
2/3 c. vegetable oil
1 egg
1 t. vanilla extract
1 1/4 c. white flour
1 1/4 c. whole wheat flour
1 t. salt
1 t. baking soda
1 c. milk
1 1/2 c. rhubarb – chopped
1/2 c. walnuts- chopped
1/2 c. white sugar
1 T. butter – melted
1/3 c. walnuts- chopped

Beat together brown sugar, oil, egg and vanilla until smooth. Combine flours, soda, salt in a different bowl and slowly add to the sugar/oil mixture, alternate to add the milk slowly as well. Beat until smooth and then add the rhubarb and 1/2 c. walnuts. Pour into two greased 9 inch round pans.

In a small bowl, combine sugar, butter and 1/3 cup walnuts. Sprinkle on top of the two pans and bake at 350 for 30-35 minutes.

Notes: Obviously this was good. It’s got rhubarb, sugar and oil. It does make a lot, so next time I’d probably cut it in half.

Servings: Two pans = lots
