Soy Sesame Roasted Vegetables February 16, 2008

I threw together this side the other day and will be making it again. Roasting vegetables give them a nice crunch and crispness while cooking the inside. I found this recipe on Kalyn’s Kitchen. I added some cauliflower and asparagus to the mix because I had them on hand. Both Chris and I enjoyed this fast and easy recipe.

1-2 cups broccoli
1-2 cups cauliflower
1 cup asparagus
1-2 T. extra virgin olive oil
1-2 T. soy sauce
1 tsp. sesame oil
Sesame seeds (a couple tablespoons)

Cut up as much broccoli, cauliflower and asparagus that you’d like to eat. In a large bowl, toss vegetables with oils, soy sauce and sesame seeds. Toss and mix well. Cover a cookie sheet with tin foil and place vegetables in a single layer on the pan. Bake at 475 degrees for 10 minutes and then flip each piece to brown the other side. Bake another 5 minutes and enjoy.

Notes: The soy sauce gives plenty of salty flavor, so don’t add any extra salt.

Servings: 2 big servings
