Roasted, Stuffed and Baked Poblano Peppers

I made these roasted, stuff poblanos several weeks ago. I *thought* I saved a link to the base recipe I used as a starter, but I failed! I can tell you what I remember though and post some links of some similar recipes to go from.

Start by roasting 5-6 poblano peppers. I do this on [...]

Ginger and Green Soup

Fall soup time! Fall soup time! I got some mustard greens in my produce box just in time for this soup from 101cookbooks. I switched some things up as I didn’t have any actual ginger on hand (oops) and I used the heartier mustard green instead of spinach, but I think I got the idea.
Salmon Curry

There were many good things about this meal. The grilled salmon, the curry sauce filled with healthy greens and vegetables, the quinoa that soaked up the sauce. The way my blood sugar sailed through this meal with peak of, oh, 140, landing nicely back around 80. I love when eating healthy matches so nicely with [...]

Baked Eggs with Tomatoes, Onion, Garlic and Herbs

While the top picture doesn’t really show it, this was a beautiful dish. Beautiful tomatoes and eggs baked and topped with melted Parmesan cheese. It felt like such an extraordinary breakfast! It was actually quite simple. Nice basic flavors, warm and perfect for the fall. Thank you to Kalyn’s Kitchen for the recipe.

Soba Noodles with Kale, Peppers and Peanuts

I have tried several different peanut sauces with soba noodles in the past and they have all been terrible. Too much peanut butter, too heavy, yuck. I found this wonderful recipe and was so excited it didn’t have peanut butter involved! I mixed up the sauce, diced and prepared everything, tasted the sauce and… added [...]

Cheese Souffle

We got a souffle dish and I have been so excited to make a souffle! I’ve heard stories of falling souffles and how difficult they are, but I followed Alton Brown’s recipe exactly and it turned out perfectly! Fluffy cheese-y, egg-y goodness! We had Jarrod and Marti over to dinner to share this with us [...]

Potato and Green Bean Salad

I adjusted this recipe just a bit as I didn’t have any arugula around and I ended up burning two rounds of walnuts so switched to pine nuts. Another gem from smitten kitchen.

1 ounce walnuts/pine nuts (about 1/3cup)
1 1/2 pounds fingerling potatoes, cut crosswise into 1/2-inch-thick rounds
6 ounces haricots, verts, or other green beans, trimmed [...]

Zucchini Bread

Zucchini bread! Thank you Smitten Kitchen!

I had two lovely zucchinis just waiting for a recipe. I decided to splurge and make this decadent zucchini bread from Smitten Kitchen. Oh, the sugar! The oil! And it tasted so good. I made half with chocolate chips & walnuts and half with just walnuts.

3 eggs
1 cup olive or [...]

Black Bean and Feta Tacos

I made this (from Smitten Kitchen)! It was good and fast and vegetarian. The side of green beans, sauted with a little olive oil and red pepper flakes, was a perfect match. The meal was a bit spicy, but in a good way! I followed the recipe exactly, except for the homemade tortillas. Enjoy!

Blueberry French Toast

This is the perfect brunch entree! I can make it the night before, toss it in the fridge and just bake for 30-40 minutes the next morning. The blue berries are perfectly in season and fresh from Michigan. Add a little mascarpone cheese to the mix and it’s filling, decadent and perfect for guests.
